BEEF CARPACCIO ON AN EDIBLE SPOON
Thinly sliced beef tenderloin with red pepper aioli, garnished with caramelized shallots and served on an edible spoon.

PULLED DUCK CORNET
Five Spice marinated pulled smoked duck in a sweet sesame cone topped with preserved orange.

SESAME CHICKEN STRIPS
Tender strips of chicken breast crusted with a light coating of sesame seeds, served with a honey-mustard dipping sauce.

TRUFFLE SCENTED STUFFED MUSHROOMS
Fresh B.C. button mushrooms stuffed with portobello and shiitake mushroms, scented with truffle oil.

JEWELS OF THE OCEAN
West coast scallops & oysters "freshly shucked". Served with crab legs, shrimp, wild sockeye salmon and baby lobster tails. Accompanied by a sea asparagus salad, lemons, cocktail sauce and creme fraiche. Presented family style.

BEEF TENDERLOIN WITH A CABERNET DEMI-GlAZE
Angus Beef tenderloin served with fresh horseradish and grainy Dijon mustard.

Sablefish, oven baked with butter, lemons & pepper.
